The Natural Process: Cure & Pickle, believes time is the most important ingredient. Their Coppa is seasoned with a delicate blend of sea salt and hand-crushed freshly ground spices, then air-dried slowly in a temperature-controlled environment. This patient aging process allows the natural enzymes to develop a rich, complex profile nuttiness without the need for artificial flavour enhancers or heavy chemical fillers.
