That is why we are thrilled to feature Cure & Pickle—a Saigon-based artisan deli bringing the time-honored European tradition of small-batch charcuterie straight to your table

Cure & Pickle works with carefully selected farms where animals are raised with care, fed nutritious diets, and never given growth hormones. Slower, more natural farming produces meat with better texture, flavour, and character—the ideal foundation for exceptional charcuterie.

Meet the Founders: A Personal Passion for Real Food

Cure & Pickle didn’t start in an industrial facility; it began right in the founders’ own home kitchen in Saigon.

As long-time food lovers and passionate home cooks, the owners were constantly frustrated by how difficult it was to find authentic charcuterie in Vietnam made from genuinely high-quality meat, that wasn’t loaded with chemical preservatives, synthetic nitrates, or artificial flavor enhancers. Missing the rich, natural flavors of traditional European cured meats, they decided to take matters into their own hands.

What started as a personal passion project—experimenting with curing chambers, precise temperature control, and natural spice blends in their own kitchen—quickly evolved into something bigger. Friends and fellow food enthusiasts kept asking for more, recognizing that true charcuterie requires patience and respect for the ingredient.

Driven by a desire to share thoughtfully sourced, handcrafted charcuterie with the community, they turned their home-kitchen mastery into a small artisan deli. Today, the founders remain hands-on in every step of the process. They treat charcuterie as a craft, relying on natural air-drying, precise ageing, and carefully chosen spices to bring out the natural character of the meat.

The Cure & Pickle Selection at ByNature 

We have curated Cure & Pickle charcuterie selection, available directly through the ByNature shop. Each product begins with responsibly sourced meat from farms committed to natural feeding, slower growth, and high welfare standards.

Sliced Selection (60g Packs)

  • Coppa: Cut from the pork neck/shoulder, marbled with delicate fat, and seasoned with natural herbs. Rich, savory, and melt-in-your-mouth tender.
  • Lomo: Made from lean pork loin, cured slowly with subtle spices. Leaner than Coppa, with a clean, concentrated pork flavor.
  • Lonza: Dry-cured pork loin aged with traditional spices for a delicate, refined flavor profile that pairs wonderfully with crisp white wine or light cheeses.
  • Bresaola: Premium beef loin, air-dried and aged to perfection. Deep, savory, and delicately spiced with a rich ruby color.

Whole Pieces (180–200g)

  • Guanciale: Cured pork cheek seasoned with black pepper. High in healthy fat and intensely flavorful—the absolute essential base for an authentic Carbonara or Amatriciana.
  • Pancetta: Italian-style cured pork belly. Rolled or flat-cured with herbs, providing a rich, savory boost to pastas, roasts, or crisping up for salads.
  • ‘Nduja: A fiery, spreadable cured pork sausage seasoned with Calabrian-style chili peppers. Perfect for smearing over warm crusty bread, stirring into pasta sauces, or dotting onto pizzas.
