Spinach and Blue Cheese Pesto Pasta

⅓ bag spaghetti
3 cups baby spinach
3 cloves garlic
3 tbsp blue cheese
1 tbsp oregano
⅓ cup olive oil
3 tbsp pine nuts
1 tbsp lemon


  1. Cook spaghetti (or your preferred pasta) in a pot with boiling water and some salt.

  2. In a blender, mix baby spinach, garlic cloves, blue cheese, oregano, pine nuts, olive oil, salt and pepper to taste and a squeeze of lemon. Blend until smooth.

  3. Add the pesto into the pot and combine with the pasta. Close to allow to warm.

    Serve warm.
